June's arrived and with it, the very much expected hot weather.
We all love hot weather but it comes with a price. Luckily, there are ways to refresh yourself from it, and we are happy to make a small contribution to the cause with this GAZPACHO MORELIANO salad.
Gazpacho Moreliano is a delicious and easy salad that originated in the City of Morelia, in the province of Michoacan, Mexico. Don't let the name fool you; it has nothing to do with the gazpacho soup from Spain. Instead, this luscious salad features tropical flavors; it's salty, tangy, and sweet and it delivers a wonderful crunch from the jicama.
The urban legend dictates that this fruit salad was created back in the time by a local resident in the City of Morelia. He was known by the nickname of "El Guero". Nowadays, if you ever visit the City, you'll discover that many locals claim to be descendants of the original "Guero".
It does not matter how many "gueros" exist in the city; this salad has stood out as a favorite for years and has become a typical dish of the region.

1 cup of peeled and diced riped mango
1 cup of peeled, cored, and diced pineapple
1 cup of peeled, and diced jicama
3 tablespoons of finely chopped white onion
1/2 cup of finely crumbled cotija cheese or queso fresco
1/2 cup of orange juice
salt to taste
Tajin chili powder to taste
Liquid Chamoy to taste
Procedure
Mix the mango, pineapple, jicama, onion, and cheese.
Add the orange juice and mix again.
Serve in a recipient of your preference and top it up with salt, tajin and chamoy.
That was easy. All you need now is to find a nice spot under the sun, call your favorite person and be open to letting this salad blow your mind and senses.
Important: Jicama can be a vegetable hard to find as it's a seasonal item. Cucumber makes a great replacement.
